Besides, Windos, is it really the Mina, Trial Captain, Fairy-Trainer and artist causually resting at Poni Gauntlet after doing a hundred sketches (probably in a row)? If, ehm... you'd tell me more about her planned contribution to the Game (maybe in a private message), I'd be down to take on her role as well. ^^

He has confirmed that. Though there's some non-canonical, timey-wimey GM discretion involved in this cameo.

Non-canonical sounds good and interesting, and I already mentioned somewhere in Iron's Game that I don't care that much about a time line and how old a canon character would be (or would not be) if they appear in-game.

You can play as Mina, but if you want them to be a battler rather than just an artist in this campaign, you have to come up with her own stats and choose 3 Pokémon of her available team. Otherwise, you are free to control them when I introduce them into a scene!
