Trading is actually not gone, only the official server is down.
This is an instruction to set your game to a fan-server, that (I think) most of the people in this forum are using.

Works fine and I got my trade evolves this way.

If you want to know how pokemon evolve, you can always check in the wiki, too:
http://pokemon-uranium.wikia.com/wiki/List_of_Pok%C3%A9mon_by_base_stats_by_type
Find your pokemon in the list and click them to find out all sorts of things about them.

i try to avoid spoilers, blind plays for the first 2-3 runs, then go for the wiki's
