Why don't you just let wild Duplicat transform your poke with single move you want to sketch, and sketch it? I tried it and it actually worked.
Though, the fact that Hinata's Whimsicott uses Spiky Shield is surely interesting. I wonder if there's any other moves exclusive to enemies.
