Well, the only double battle Gym Leaders in the main series are Tate and Liza in the Hoenn games (using only Solrock and Lunatone in R/S/OR/AS, where they're a complete joke aside from a level spike, and 2 pokemon each in Emerald, where they're actually somewhat challenging on top of the level spike) and the rest of the Hoenn Gym Leaders in their Emerald rematches (each with a full team of 6 and even a little strategy at max difficulty).
Apart from the main games, there's also every single battle in Colosseum and most of XD (and those boss fights can be tough as nails if you're not ready for their strategies. Everything from EQ spam, status spam, weather abuse, Skill Swapping Truant off of Slaking...those games really bring the pain and variety)
Of course, those still aren't nearly as hardcore as double battles in some fan games/rom hacks, where those powerful doubles strats tend to really be abused...
