No, damage pools can only be reduced to 0 by cover or shield moves or typing.
Although 5 is high enough that I might occasionally handwave that Ventus' Pokemon simply are unaffected by certain very low damage environments. It's a special milestone for sure.
Wild Pokemon can have Vit higher than 5!
