Also, I don't want to share Encounters typically, as I don't want XP divided up or having to debate who gets the Pokémon if both parties want to catch them. There are exception, but seldom they are.

When the cap is written as 1 (2), that means 1 person can catch and another can accompany, and you can bid on who gets to catch it. But of course you as a party always try to work it out without bidding.
