There's a very, very important terminology distinction here that needs to be kept in mind. While Vitality influences both HP and (Sp.) Def, the two stats are completely separate from the Attribute as far as increasing them goes.
- HP is how much damage you can take before fainting. This cannot be increased or decreased through any means except Surprises. (Though Deyo Powder in Skull Ruins can temporarily increase maximum HP, so homebrew items can be exceptions to the rule(s))
- Vitality determines what your normal maximum HP and base Defense value are. This can also only be increased or decreased with Surprises, and doing so affects both max HP and Def.
- Defense determines how much you reduce incoming damage by. This can be increased or decreased by moves such as Harden, Iron Defense, Close Combat, etc. in addition to Surprises. Lots of Ability and move effects can also have something to do with influencing/ignoring this stat, unlike with HP related stuff.
A +1 Vit Surprise is equivalent to both +1 HP and +1 Defense. Surprises that increase either HP or Def without touching the other are cheaper than a straight up Vit Surprise.

...uh, nope. Drawing a blank on how long those Transformations last, tbh. Other than the apparent current rule of 'move effects will only last 30-60 minutes at most. I've not had Mew use Transform yet (discounting when she turned into a Skitty) and don't remember ever asking how long she can maintain a Transformation, tbh...
Book does say recalling a pokemon will usually end Transformations instantly, I guess?
