Well, she doesn't know in-chara for certain that it's also a Grass Type as it hasn't been stated, she believes it's a pure Rock Type.

Aside from the rocky 'warts' and the geode replacing the bulb, it looks like a normal Bulbasaur for the most part.  Pretty safe to assume that it's a Grass/Rock type just by looking at it, imo, given that plant matter is a part of its body.  Plus, 'not poisonous' was meant to imply only the Poison typing wasn't present.
