That leads me to a question: Will it hail in that fight too (that influences my choice of 'Mon for that Encounter), how many Pokemon can each of us send out in the space we have in that corridor?

It will be hailing, yes.  There's enough space on the 'stage' for everyone to summon 2 pokemon each if you come out of hiding, but only enough space for 4 human sized pokemon in the corridor.
