Iron, how does the use of items work in your campaign? Like, I have two Persim Berry Juices - if I use one on Cottonee now, does this take place between the Rounds, ergo can I still attack in Roung 2? Or is it like in the Games that your Round ends if you use an item on a Pokemon?

Trainers get a free Trainer Action every turn, which includes using healing items. So yeah you could still attack in Round 2.

It might still go hostile and bite of the sudden contact with you if it feels like doing so, depending in what mood the snake currently is.
