I don't know what Eevolution I choose...I between Jolteon, Flareon, Umbreon, Espeon, and Sylveon. I was thinking about Nucleon but I suppose the chance of finding a Nucmon is even less than find a Legendary.

Nucleon would be reeeeeaaaalllly hard to pull off considering the majority of Nuclear types are confined to Tandor for safety reasons.
If there's one thing Eevee is amazing at doing in my personal opinion, it's filling gaps in your team's type coverage, so that's what I usually consider whenever I end up with an Eevee somehow. Nothing wrong with going with favorites either, though!

Terra definitely has the relevant skills to know. I'll say they are edible, tasty, and regrow quickly enough that you can eat them whenever. But you have to carefully remove the poison gills first.
You could also craft a Toxic Orb, perhaps.
Which means he and the group has a source of constantly regenerating food if brought on long trecks, albeit one that is potentially nausiating if not prepared correctly. Crafting a Toxic Orb could be useful for Shiranui or if somebody else gets a Poison Heal Pokemon, so that's not a bad side bonus benefit!
Of course, I'll have to tame the tortoise first before it could be properly used, and taking it along means I have to leave another 'mon behind.....hmm.

Concerning Torterra, nope, you can keep it, I'm fine that you've caught it. It was important to me that they ARE caught in the first place so that they can't cause ruckus within the mine again.
Shiva can also help you to see if these cave fungus on their shell are useful in a way, as she's very in tune with nature - just in a different way than Terra is, me feels he's more the 'Survive in the harsh nature'-guy and she's the 'Enjoy mother nature's beauty and benelovence'-one. ^^
You can actually do async encounters, like so:
1. Angela fights Terra. It's Angela's second Encounter and Terra's third.
2. Angela fights Shiva. It's Angela's third Encounter and Shiva's third.
That sounds alright by me, so long as its not too much trouble for you to pull off!
Oh, and thank you Phantom. Yeah, I sorta agree with your perspective of our chara's interp of Nature, though I do have to remind you that he appreciates it in his own way too beyond a Survivalistic outlook. He wouldn't have been able to deduce what Shiva's last name referred to if he didn't have at least a well established interest in plants otherwise, nor have been able to teach his Pokemon about them. Its a trait like his merchant and contest preformer background: something that doesn't come up quite often, but is still quite relevant to his chara.

Woot! We both got Sunstones, Phantom! Looks like Cottenee can finally Evolve at long last!!! What does Petalglass end up making, though?
Is that all the mining that can be done by our charas, Iron? If so, we probably will need to get a move on with the rest of our in game day. Not going to be posting anymore this IRL day, though, as I gots works to do, and lots of it!

If you gather enough Petalglass, a skilled craftsman can form it into a Leaf Stone (there's known shards for every evolutionary stone except the Ice Stone in Creshire). Or Professor Mallorn could turn a bunch of shards of every single evolutionary stone into a Neverstone. They can also be used by move tutors to assist in teaching moves of the same type. It's been awhile, but we learned all about Evolutionary Shards waaaaaaaayyyyy back around the time we were in Corsage. We just haven't really found enough of them to really make good use of them.
Fire Stone: Fireglass
Water Stone: Seaglass
Thunder Stone: Thunderglass
Leaf Stone: Petalglass
Moon Stone: Moonglass
Sun Stone: Flareglass
Shiny Stone: Shimmerglass
Dusk Stone: Duskglass
Dawn Stone: Dawnglass
Ice Stone: Undiscovered (but also irrelevant if Iron has another method for evolving A-Vulpix/A-Sandshrew in mind)
Everstone: ??? (I actually don't have this one in my notes)
Neverstone: Formed from all of the above in unknown quantities (minus the Ice Stone) using a currently secret process that Professor Mallorn undoubtedly has patented (or will soon if not)

Yep that's your Encounter all wrapped up.
Everstone is actually really easy to make, in keeping with how cheap it usually is in canon. I don't really have a story for it, but it can be easily produced in a factory or maybe a laboratory from fairly common materials.
