Become an epic breeder... work on a competitive team and challenge online trainers... start a new game file with a different starter, and/or try to play with a "themed" team... hopefully the devs will get the bugs ironed out soon and be able to start in on the post-game content like Angelure Town and the missing legendaries.
Have you completed your Pokedex yet?

If you have need to play the game even more, completing the dex will certainly burn time away. I suggest just starting a new playthrough with a new team, and see how far you can get with them. Might even challenge yourself with a Monotype team, even.

I asked myself that weeks ago... Now I've bred an army of random stuff
 Really, not much to do besides breeding and get ready for competitive while wait patiently for new contents. If you don't like that, either call it quits and move on or idk, cry in a corner?
